Survivor Blend

STORY

We are raising our mugs to 10 years in the business with this boozy, fruity, and smooth coffee! This celebratory blend is brought to you from three of our different partners.

Sebastian Ramirez (60%):

Sixty percent of the blend comes from Sebastian Ramirez in Colombia. He has brought some great coffees to Three Tree in recent history and this is no exception! Sebastian is a 4th generation coffee farmer and is aiding the young producer program through Unblended to train the next generation of farmers. He is pushing the boundaries with his experimental coffees. The coffee in our Survivor blend is a Natural Caturra. It is fermented for 72 hours and dried naturally, meaning that the coffee cherry, pulp, and parchment remains intact through the drying process. This coffee shines in this blend. It is boozy, fermented, fruity, and intense and carries the blend giving it a lingering aftertaste.

Higa Coffee (20%):

Twenty percent of the blend is a Washed Burundi coffee from Higa Coffee Importers! After picking, the coffee cherries first go through a process called "floating" wherein the "sinkers" are separated from the "floaters." The floaters are processed as a lower-grade coffee, and the sinkers are classified as a higher-grade coffee and sorted even further to take out any overripe or damaged cherries. The fully washed coffee is fermented for 12 hours, and then afterwards go through a final sorting process to determine further bean grading (A1, A2, A3, A4: A1 being the largest bean size). The coffee is then finally dried on African drying beds before they are bagged and shipped to us. This coffee brings some lovely acidity and zing to the blend.

Finca Terrerito (20%):

The last remaining twenty percent comes from our great long-standing partners Finca Terrerito! They are in all three of our constant blends: Espresso, Treehouse, and Cold Brew! This washed coffee from them is a very traditional Honduran coffee. Its chocolatey, nutty, and smooth and really helps balance out this blend into something incredibly palatable and enjoyable.
